  • 0.06 cup Five cheese italian salad dressing
  • 1/50 cup Lime juice
  • 0.17 teaspoon Marinade for chicken
  • 1/25 pound Boneless skinless chicken breasts, cut into 3 inch x 1/2 inch strips
  • 1 Thin Slices Prosciutto
  • 2 Fresh basil leaves
  • As required Avocado dip
  • 0.17 Medium ripe avocados, peeled
  • 1/50 cup Minced fresh cilantro
  • 0.17 Green onions, chopped
  • 0.17 tablespoon Lime juice
  • 0.17 tablespoon Mayonnaise
  • 0.13 teaspoon Prepared horseradish
  • 0.08 Garlic clove, minced
  • 1/50 teaspoon Salt

Directions: Prosciutto Chicken Kabobs Recipe

Cooking Direction

  • STEP 1.In a large resealable plastic bag, combine the salad dressing, lime juice and marinade for chicken; add chicken. Seal bag and turn to coat; refrigerate for 1 hour.
  • STEP 2.Drain and discard marinade. Fold prosciutto slices in half; top each with two basil leaves and a chicken strip. Roll up jelly-roll style, starting with a short side. Thread onto metal or soaked wooden skewers.
  • STEP 3.Grill, covered, over medium heat or broil 4 in. From the heat for 5 minutes on each side or until the chicken is no longer pink.
  • STEP 4.Meanwhile, in a small bowl, mash the avocados. Stir in the cilantro, onions, lime juice, mayonnaise, horseradish, garlic and salt. Serve with kabobs.

Cooking Tips

  • If you don't have the chicken seasoning spice rub, then you can totally substitute in some paprika and black pepper.

Serving and Storage

  • Reheat before serving.
  • It can be stored for up to 2 days in the fridge.
