Ambali is basically a summer comfort, summer comfort fermented porridge prepared using Rice or Millets. Ambali is a rich source of vit B12 ( generally found in animal based food like meat, fish, milk & milk products etc)and is a very good immunity booster. So for vegetarians diet followers, Ambali is a great source of Vit B12 & also strengthens our gut health.

Ingredients for Probiotic Brown rice coconut Ambali Recipe

  • 0.33 cup brown rice
  • 3 cups Water
  • 0.17 cup Probiotic thick Curd
  • 0.33 cup Water
  • 0.17 cup scraped fresh coconut
  • 0.08 cup Coriander leaves
  • 0.08 cup Mint leaves
  • 0.33 tbsp Lemon juice
  • 0-0.33 nos green chillies
  • 0.33 inch Ginger
  • 0.33 tsp Pink salt
  • 0.33 tsp Roasted coarsely Cumin seeds powder
  • 0.17 tsp black pepper powder
  • 0-0.33 nos chopped shallots
  • As required Hand full of Curry leaves
  • As required Pinch of Hing or Asafoetida
  • 0.33 tsp Small Mustard seeds or Rai
  • 0.33 tbsp white oil

Directions: Probiotic Brown Rice Coconut Ambali Recipe

  • STEP 1.Wash & Soak Brown rice for at least 2 hrs.
  • STEP 2.Pressure cook 1 cup brown rice with 9 cups of water until 4 whistles on medium flame. Make sure Brown rice should be soft & cooked rice-water solutions should be thin, as it will become thick after cool.
  • STEP 3.Take out cooked rice-water solution into an earthen pot & cool completely. After that cover the top of the earthen pot with a muslin cloth & place a dish or any lid on it. Keep in a warm place & let it ferment over night.
  • STEP 4.Next day open the lid & cloth & beat with a wooden whisker for 2-3 min. or until batter consistency. Add scraped fresh Coconut, chopped Shallot & mix. In a blender, add probiotic thick Curd, water, coriander leaves, mint leaves, lemon juice, green chillies, roasted Cumin powder, pink salt. Blend until smooth. Homemade masala Chaas is ready. Pour the prepared Chaas into the fermented Rice pot & whisk together properly. Serve the Brown rice Coconut Ambali into earthenware.
  • STEP 5.For tempering heat Oil into a pan, add Hing or Asafoetida, Mustard seeds, curry leaves, let it crackle, now sprinkle a spoon full of tempering all over the Ambali. Finally sprinkle some roasted cumin powder, black pepper powder & scraped coconut.
  • STEP 6.Enjoy this instant energetic probiotic Brown rice Coconut Ambali for breakfast & start a healthy refreshing day.
