One of my mom's favourite recipes. Its very healthy & summer comfort probiotic meal. This recipe helps to strengthen gut health. It should be consumed by every women.

Ingredients for Probiotic Brown rice Coconut Ambali Recipe

  • 1/2 cup Brown rice
  • 4.50 cups water
  • 1/4 cup Probiotic thick Curd
  • 1/2 cup water
  • 1/4 cup Scraped fresh coconut
  • 0.13 cup Coriander leaves
  • 0.13 cup Mint leaves
  • 1/2 tbsp Lemon juice
  • 2.50 Pieces Green chillies
  • 1/2 inch Ginger
  • 1/2 tsp Pink salt
  • 1/2 tsp Roasted coarsely Cumin seeds powder
  • 1/4 tsp Black pepper powder
  • 2.50 Pieces Chopped shallots
  • A Handful Hand full of Curry leaves
  • A Pinch Pinch of Hing or Asafoetida
  • 1/2 tsp Small Mustard seeds or Rai
  • 1/2 tbsp white oil

Directions: Probiotic Brown Rice Coconut Ambali Recipe

  • STEP 1.Wash & Soak Brown rice for atleast 2 hrs.
  • STEP 2.Pressure cook 1 cup brown rice with 9 cups of water until 4 whistles on medium flame. Make sure Brown rice should be soft & cooked rice-water solutions should be thin, as it will become thick after cool.
  • STEP 3.Take out cooked rice-water solution into a earthen pot & cool completely. After that cover the top of the earthen pot with a muslin cloth & place a dish or any lid on it. Keep in a warm place & let it fermented over night.
  • STEP 4.Next day open the lid & cloth & beat with a wooden whisker for 2-3 min. or until batter consistency. Add scraped fresh Coconut, chopped Shallot & mix.
  • STEP 5.In a blender, add probiotic thick Curd, water, coriander leaves, mint leaves, lemon juice, green chillies, roasted Cumin powder, pink salt. Blend until smooth. Home made masala Chaas is ready. Pour the prepared Chaas into the fermented Rice pot & whisk together properly. Sreve the Brown rice Coconut Ambali into a earthenware.
  • STEP 6.For tempering heat Oil into a pan, add Hing or Asafoetida, Mustard seeds, curry leaves, let it crackle, now sprinkle spoon full of tempering all over the Ambali. Finally sprinkle some roasted cumin powder, black pepper powder & scraped coconut.
  • STEP 7.Enjoy this instant energetic probiotic Brown rice Coconut Ambali in breakfast & start a healthy refreshing day.
