Ingredients for Potato salad/potato cheesy salad (with mustard and green peppercorn dressing) Recipe

  • 187.50 g 750g orang sweet potato (kumara) peeled,cut into 4cm pieces
  • 187.50 g coliban potatoes peeled cuinto 4inch pieces
  • 12.50 g 50g baby rocket leaves washed, dried
  • As Required Dressing
  • 1/4 g 1 Garlic clove
  • As Required Crushed
  • 0.38 tbsp 1 1/2 tbsp wholegrain mustard
  • 1/4 tbsp 1tbsp drained green peppercorns finelly chopped
  • 1/4 tbsp Fresh orange juice
  • 1/4 As Required Quantity basic mayonnaise
  • As Required Salt & freshly ground black pepper
  • As Required Fresh lemon juice
  • to taste to taste

Directions: Potato Salad/potato Cheesy Salad (with Mustard And Green Peppercorn Dressing) Recipe

  • STEP 1.Step 1:-
  • STEP 2.To make the dressing, add the garlic, mustard, peppercorns and orange juice to the mayonnaise. Whisk well to combine. Taste and season with salt and pepper, adding extra lemon juice to taste if desired. Cover with plastic wrap and place in the fridge until required.
  • STEP 3.Step2:-
  • STEP 4.Place sweet potato and potato in a steamer basket over a saucepan of simmering water. Steam for 10 minutes or until just tender. Drain potatoes and set aside for 10 minutes to cool slightly.
  • STEP 5.Step3:-
  • STEP 6.Place the potatoes in a large serving bowl. Add the dressing and baby rocket leaves and gently toss to combine. Serve immediately.
  • STEP 7.Enjoy cheesy creamy potato salad .
