This recipe is a take between mashed potato and potato salad. Experience with my own family shows you can't go wrong with potatoes served as a side, young or old no one complains. This recipe adds a wow factor to the presentation and looks appetising as a centrepiece. I would describe this as a 'potato salad dressed up. These are fantastic with any meat or fish meal, with BBQ or to take on a picnic. When taking on a picnic i usually pack all the components separately and put them together there.
