  • STEP 1.Pressure cook the lentils and potatoes until they are soft and mushy.
  • STEP 2.In a pan, heat oil and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions, ginger, and garlic and sauté until they turn golden brown.
  • STEP 4.Add turmeric powder, red chili powder, and coriander powder and mix well.
  • STEP 5.Add the cooked lentils and potatoes to the pan and mix everything together.
  • STEP 6.Add coconut milk and simmer for a few minutes until the curry thickens.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.
