If you're looking for something a little different in a potato salad, this potato and green bean combo is an excellent choice. The green beans and red-skinned potatoes add bright color and fresh flavor. A dressing of mayonnaise, sour cream, dill, and lemon brings all of the ingredients together in the most delicious way. For best flavor, make the salad a few hours in advance; cover the bowl and chill the salad until serving time. If there are ingredients in the recipe that your family isn't fond of, feel free to substitute or add other vegetables. Omit the onions, if you like, or replace them with some diced seeded cucumbers or radish. If you have fresh chives, chop them and add them to the salad or use them as a garnish. If you like eggs in your potato salad, add some chopped hard-boiled eggs.
