500 gram Bok choy
100 gram Lean pork
100 gram Shiitake mushrooms
6 No.s Garlic Cloves
1/2 piece Ginger
2 tablespoon Soy sauce
1 tablespoon Corn flour
30 milliliter Water
50 milliliter Chicken Stock
As required Salt

STEP 1.1 fill a saucepan with water and bring to a boil.
step 2
STEP 2.2 add the bok choy ‘buds’ to the boiling water and blanch for 2 minutes.

STEP 3.3 then remove and hold under cold running water.
step 4
STEP 4.4 in a small bowl combine 30 ml water with 1 tbsp cornflour and make a smooth mixture. Keep aside
step 5
STEP 5.5 then place the bok choy in a bowl, add 3 cloves of finely chopped garlic and a pinch of salt.

STEP 6.6 heat 2 tsp of oil in a wok, add 100 gm lean pork cut into as small cubes as possible and fry for 5 minutes.

STEP 7.7 add ½ cm finely chopped ginger and 3 cloves finely chopped garlic and stir.

STEP 8.8 then add 100 gm shiitake mushrooms finely diced and fry for 2 minutes.

STEP 9.9 add 2 tbsp soy sauce, 50 ml stock, salt to taste and fry for a further 2 minutes.

STEP 10.10 then add cornflour water mixture, stir and cook for 1 minute.

STEP 11.11 arrange the bok choy on a plate and spoon the pork and mushroom into the buds. Serve hot.
