Ingredients for Pollo Pibil Recipe

  • As required For marinade
  • 1/2 cup Orange juice
  • 1/2 cup Lime Juice
  • 1-3 ounce 5 achiote paste package
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon whole cumin
  • 2 whole cloves
  • 1/2 teaspoon black peppercorn
  • 1/4 piece Cinnamon Stick
  • 10 garlic cloves
  • 1/4 onion rough chopped
  • 2 teaspoon Salt
  • As required For chicken
  • 4 pound chicken any cut
  • 9 feet banana leaves
  • 1/2 cup Water
  • As required To serve
  • 1 dozen corn tortillas optional
  • As required Pickled red onions optional

Directions: Pollo Pibil Recipe

step 1

  • STEP 1.Add all the marinate ingredient in a blender and blend until smooth

step 2

  • STEP 2.Marinade the washed chicken

step 3

  • STEP 3.Coat well and keep aside for 4hours

step 4

  • STEP 4.Add the banana leaves in a slow cooker

step 5

  • STEP 5.Add the marinated chicken in the center of the banana leaves

step 6

  • STEP 6.Cover with over flowing of the banana leaf

step 7

  • STEP 7.Cover the banana leaves with water

step 8

  • STEP 8.Cover and cook for 4hours

step 9

  • STEP 9.Discard the banana leaves and bones

step 10

  • STEP 10.Serve with tortillas and red onion pickle
