Also called as sanbusaj and sambusak in some countries, the samosa is a deep-fried potato snack. The dough is filled with potatoes and spices and fried until golden-brown. From its Middle-Eastern roots to its entry into the Indian cuisine during the Delhi Sultanate, the samosa has seen many transformations. It could be a vegetarian treat or a meaty delight, with minced chicken or mutton. Then there are other variationns like Chinese samosa, noodle samosa, pasta samosa and many others.
