STEP 1.Heat olive oil in a pan, add the garlic and fry till it turns brown then add the quinoa and fry for approximately 5 mins.
STEP 2.Gradually add the stock and stir constantly then add the beet puree.
STEP 3.Add pepper and salt as per taste.
STEP 4.Remove from heat and pour into a serving dish.
STEP 5.Garnish with feta and chopped beet on top and serve hot.
