Ingredients for Pink Quinoa Risotto Recipe Recipe

  • 1 Cup Quinoa
  • 1/2 Litre Vegetable broth
  • 2 Tbsp Olive oil
  • 1 Pieces Beetroot parboiled and pureed
  • 1/2 Pieces Beetroot parboiled and chopped
  • 2 Pieces Garlic cloves
  • 2 Tbsp Feta cheese
  • 1/2 Cup Edamame
  • 1/2 Cup White wine
  • As required Salt and pepper

Directions: Pink Quinoa Risotto Recipe

  • STEP 1.Heat olive oil in a pan, add the garlic and fry till it turns brown then add the quinoa and fry for approximately 5 mins.
  • STEP 2.Gradually add the stock and stir constantly then add the beet puree.
  • STEP 3.Add pepper and salt as per taste.
  • STEP 4.Remove from heat and pour into a serving dish.
  • STEP 5.Garnish with feta and chopped beet on top and serve hot.
