Directions: Baghali Polo Recipe

Cooking Directions

  • STEP 1.Rinse the basmati rice under cold water until the water runs clear.
  • STEP 2.In a large pot, bring water to a boil and add salt. Add the rice and cook until it is parboiled.
  • STEP 3.In a separate pot, blanch the fava beans in boiling water for a few minutes, then drain and set aside.
  • STEP 4.In a large non-stick pot, melt butter and add the saffron water. Add a layer of rice, followed by a layer of fava beans and dill. Repeat the layers until all the ingredients are used.
  • STEP 5.Cover the pot with a clean kitchen towel and place the lid on top. Cook on low heat for about 45 minutes, or until the rice is fully cooked and fluffy.
  • STEP 6.Serve the Baghali Polo with tender pieces of lamb or chicken on top, and garnish with additional dill and saffron if desired.

Cooking Tips

  • Make sure to rinse the rice thoroughly to remove excess starch.
  • Parboiling the rice ensures that it cooks evenly and doesn't become mushy.
  • Blanching the fava beans helps to remove the outer skin and makes them tender.
  • You can also add other ingredients like raisins or barberries for added flavor and texture.
  • To make the dish vegetarian, you can omit the meat and serve it as a standalone rice dish.

Storage and Serving

  • Baghali Polo can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the leftovers in a microwave or on the stovetop with a little bit of water to prevent drying out.
  • Serve the Baghali Polo as a main dish with a side of yogurt or a fresh salad.
