Ingredients for Pepper Pot Soup Recipe

gm pig tails, scrubbed, rinsed in cold water, and cut into 1 s
450 gram
salt beef, cut into 1/2 inch cubes
450 gram
yams, peeled and chopped into 1 inch cubes
3 liter
pints water
4 cup
ice water

okra, rinsed

Indian kale, trimmed of heavy stalks and finely sliced
1 teaspoon
powdered thyme
As required
Freshly ground salt
As required
Freshly ground pepper

onion, thinly sliced

scallions, finely chopped

callaloo or 1 pound fresh spinach, shredded

STEP 1.
1 - in a pot cook pigtails in 20 cups of water on medium heat to render fat.

STEP 2.
2 - add salt beef in a pan and saute until it turns brown.

3 - now add 6 ½ pints of water and allow it to simmer for an hour.

STEP 4.
4 - after an hour add coco, yams and ice cold water to the pan.

5 - skim off the fat and let it cook for another 30 minutes.

STEP 6.
6 - add kale, okra, thyme, pepper, scallion, onions and callaloo.

STEP 7.
7 - boil for 3 more minutes and serve hot.
