A stir fry of crunchy courgette flavoured with chilli and ginger garlic and seasoned with sesame oil. Tis delecious recipe is prepared with handful of ingredient like courgette, red chilli, ginger, garlic, spring onion, sesame oil and flavoured with sweet bean sauce. Try this recipe for lunch or dinner with the sides of flat bread.

Ingredients for Peking Spicy Courgette Stir Fry Recipe

  • 500 gram Courgette thinly sliced
  • 1 No.s Red chilli or red bell pepper thinly sliced
  • 10 gram Ginger finely chopped
  • 4 Garlic finely chopped cloves
  • 1 No.s Spring onion finely chopped
  • 2 tablespoon Sweet bean sauce
  • 1 tablespoon Sesame oil
  • As required Salt

Directions: Peking Spicy Courgette Stir Fry Recipe

step 1

  • STEP 1.Cut the courgette into half along the length and scoop out the seeds. Cut the courgette to get 500 gm thin slices.

  • STEP 1.In a pan bring 1 liter of water to a boil and add the courgette slices. Boil for 30 seconds to blanch them. Then remove the vegetables from the water and drain it.

  • STEP 1.In a pan heat 1 tbsp oil, add 10 gm finely chopped ginger, 4 cloves finely chopped garlic, 1 finely chopped spring onion and 1 finely chopped red chilli.

  • STEP 1.Stir fry for a few seconds till fragrant. Next add 2 tbsp sweet bean sauce and mix to combine well.

  • STEP 1.Add 30 ml of water and stir. -9)add the blanched courgette and stir fry for 20 seconds. Add the blanched courgette and stir fry for 20 seconds.

  • STEP 1.Then add 1 tbsp sesame oil, salt to taste and stir. Turn off the what and transfer to a serving bowl. Spoon the liquid from the pan over the vegetable.
