STEP 1.saute 2 shallots onion, 1 garlic until it shrinks slightly.
STEP 2.Add ½ cup roasted peanuts and saute well.
STEP 3.Also add few coriander, few mint and 4 chilli.
STEP 4.Saute until the coriander shrinks slightly.
STEP 5.Cool completely, and transfer to the mixer jar.
STEP 6.Add small tamarind, ½ tsp salt and ½ cup water.
STEP 7.Grind to smooth paste adding water if required.
STEP 8.To prepare the tempering, heat 2 tsp oil. splutter 1 tsp mustard, ½ tsp urad dal, 1 dried red chilli and few curry leaves.
STEP 9.Pour the tempering over the chutney and mix well.
STEP 10.Finally, hotel style peanut chutney is ready to serve with idli and dosa.
