Ingredients for Peanut Butter And Lime Chicken Recipe

  • 8 Chicken drumsticks Nos
  • 3 Garlic finely chopped cloves
  • 4 Lime leaves Nos
  • 1 Ginger finely chopped cm
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground coriander seeds
  • 1 teaspoon Chilli Powder
  • 4 teaspoon Crunchy peanut butter
  • bunch Coriander roughly chopped A
  • 3 Spring onion roughly chopped Nos
  • 1 tablespoon Sugar
  • 1 Chicken stock ltr
  • As required Salt
  • 2 tablespoon Oil

Directions: Peanut Butter And Lime Chicken Recipe

step 1

  • STEP 1.1 cut the knuckles of 8 chicken drumsticks.

step 2

  • STEP 2.2 then chop each drumstick into 2 equal pieces. Keep aside.

step 3

  • STEP 3.1 in a wok heat 2 tbsp oil, 1 cm ginger finely chopped, 3 cloves of garlic finely chopped and stir fry for a few seconds till aromatic.

  • STEP 4.2 add 8 chicken drumsticks cut into halves and stir fry for 2 minutes.

  • STEP 5.3 then add 1 tsp turmeric powder, 1 tsp paprika, 1 tsp ground coriander seeds and 1 tsp chilli powder (optional).

  • STEP 6.4 stir fry for 2 minutes on medium heat. Ensure that the chicken pieces sare well located with all the spice powders.

step 7

  • STEP 7.5 next add 4 tsp crunchy peanut butter and 1 ltr chicken stock. Stir to mix the ingredients well.

step 8

  • STEP 8.6 bring to a boil and add 4 lime leaves. Push the leaves into the stock .

step 9

  • STEP 9.7; cover and cook on simmer for 30 to 40 minutes.

  • STEP 10.8 when chicken has cooked tender, add 1 tbsp sugar and salt to taste.

step 11

  • STEP 11.9 remove the lime leaves from the wok.

step 12

  • STEP 12.10 lastly add a small bunch of coriander and 3 spring onions roughly chopped. Stir.

step 13

  • STEP 13.11 turn off the what and transfer peanut butter and lime chicken to a serving dish.
