We used fresh buttons and shiitake as well as dried porcini. any combo of fresh mushrooms will work, but always include the porcini for its flavorful soaking liquid.

  • As required Coarse salt and ground pepper
  • 3 ounce Gemelli or other short twisted pasta
  • 1/4 ounce Dried porcini mushrooms, rinsed in cold water
  • 1 tablespoon Butter
  • 1/4 Shallot, minced
  • 0.13 cup Dry white wine, such as sauvignon blanc
  • 2.50 ounce Button mushrooms, trimmed and thinly sliced
  • 2 ounce Shiitake mushrooms, stemmed and thinly sliced
  • 1/4 tablespoon Fresh thyme, chopped
  • 0.06 cup Grated parmesan, plus more for serving
