This potato salad is loaded with great flavor from fresh parsley and a tart crunch from dill pickles. We had company with us for dinner the first time i made this salad and everyone raved about it.
Ingredients for Parsley And Pickles Potato Salad Recipe
1/4 pound Red potatoes diced into 1/2" pieces
0.13-1/4 tablespoon Olive oil
0.13 teaspoon Kosher salt
0.06 teaspoon Freshly ground black pepper
0.06 cup Sour cream
0.03 cup Mayonnaise
1/4 tablespoon Dill pickle juice
0.13 cup Dill pickles diced into 1/4" pieces
0.03 cup Thinly Sliced Green Onions
0.06 bunch Italian parsley chopped small, about 1/2 cup worth
