The paper plane is the creation of sam ross, who was listening to the m. I. A. Song of the same name as he tinkered with the recipe. Its a delicious equal-parts sour, with bourbon and aperol laying down a solid foundation for the magic flavors of amaro nonino. Ross original recipe actually called for campari, a much bitterer citrus apritif than aperol. We like the updated version, but feel free to try with either one you like, or any other bitter citrus apritif you have on hand.
