Paneer pulao with Gobi rassa, this combination is a Traditional Bengali delicacy, which is prepared during any puja occasion. It's a pure veg combination. Gobi rassa is a no onion, no garlic recipe. In this recipe Gobi & potatoes are cooked with minimal ingredients, such as Ghee, hing, ginger green chilli paste, cumin seeds paste, tomato puree & some spices. This recipe goes well with Paneer polau & Lauki ki raita. #glen

Ingredients for Paneer pulao with Gobi rassa & Lauki ki raita. Recipe

  • 25 g paneer cubes
  • As required Whole garam masala
  • 1/4 inch cinnamon sticks
  • 0-1/4 nos Cloves
  • 0-1/4 nos Green cardamoms pods
  • 1/4 nos Star anise
  • 1/4 tsp Caraway seeds
  • 1/2 cups Long grain aromatic Basmati rice
  • 1 cups Water
  • 1.25 tbsp Ghee +
  • 0.06 cup chopped carrots
  • As required Few cashew nuts
  • As required few raisins
  • 1/4 tsp Roasted Nutmeg & Mace powder
  • As required salt to taste
  • 1/2 tbsp Sugar

Directions: Paneer Pulao With Gobi Rassa & Lauki Ki Raita. Recipe

  • STEP 1.Soak basmati rice for 1 hr.
  • STEP 2.Heat ghee in a deep vessel fry paneer cubes slightly & set aside. Then fry cashews & raisins, set aside. Heat some ghee in the same vessel, add caraway seeds, whole garam masala & chopped carrots, fry for few minutes. Add soaked basmati rice & fry for 2-3 min. Now add bay leaves, salt, sugar & water, bring to boil & cover & cook for 5 min on low flame or until rice cook properly & water absorbed perfectly. Switch off the flame, cover & keep it into standing time for 5 min.
  • STEP 3.Then sprinkle some roasted Nutmeg & Mace powder & ghee. Paneer pulao is ready to serve.
  • STEP 4.This recipe goes well with Bengali traditional Gobi rassa & lauki ki raita.
