STEP 1.Scoop out little paneer from the center at each cube. Transfer the scooped out paneer in a bowl. Heat oil a non stick pan add finely chopped green chillies and ginger.. Sauté till fragrant. Add the chopped raisins and chopped cashew nuts along with scooped out paneer. Sauté for a minute, add salt, red chilli powder, and coriander leaves. Mix well. Stuffing is ready. Stuff this mixture in a scooped out paneer cubes. Heat oil again in the same pan and shallow fry the paneer cubes gently until heated through.
STEP 2.For Gravy
2-3 tbsp Oil
Whole spices ( 2 Bay leaves, 3 - 4 green cardmoms, 1/2 inch cinnamon, 2-3 cloves 1 tbsp ginger - garlic paste, 1 cup fresh tomato puree, 2 green chillies, 2 tbsp coriander powder, 1 /2 tsp red chilli powder, 1/2 tsp turmeric powder, 1 tsp garam masala powder, 1/2 tsp kitchen king masala powder. 10 - 12 cashew nuts soaked in hot water for 15 minutes then ground to a smooth paste. 2 tbsp yogurt, salt as per taste, 1 tsp sugar, 3 tbsp browned onion paste. ( to make the brown onion paste : grind 1/2 cup of fried onions with little water to make a smooth paste ) 2 tbsp fresh cream, 1/2 tsp of kewra water.
STEP 3.FOR MAKING GRAVY : Heat oil in a heavy bottomed kadhai, add the whole spices sauté on medium low heat. Add the ginger garlic paste sauté until Fragrant.. Add the tomato puree mix well and cook on medium heat until oil oozes from the sides. Add slit green chillies and all the masalas ( mentioned above) sauté on medium heat for 3 to 4 minutes. Time to add yogurt and cashew nut paste.. Mix well.. Now add, sugar salt and browned onion paste.. Add 1/2 cup water cover and cook the gravy for another 4 to 5 minutes on low heat.. Add the cream, cardamom powder, and kewra water.. Mix everything well.. Finally, add the paneer cubes..And garnish with crumbled paneer and raisins..
