  • 1 teaspoon panch phoran
  • 2 piece dried red chilies
  • 2 piece bay leaves
  • 2 piece green chilies
  • 12 gram Salt
  • 25 gram Sugar
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon bhaja masala
  • 5 gram Ghee
  • 10 gram coriander leaves
  • 200 gram pumpkin cubes
  • 200 gram potatoes cube
  • 100 gram sweet potatoes cubes
  • 200 gram cauliflower florets
  • 100 gram yardlong beans segments
  • 100 gram cabbage segments
  • 100 gram brinjal cubes
  • As required Mustard oil

  • STEP 1.Cut the vegetables

  • STEP 2.Heat the pan with mustard oil

step 3

  • STEP 3.Add brinjals to fry and set aside

step 4

  • STEP 4.Temper oil with dried red chilies, bay leaves,green chilies and panch phoran

step 5

  • STEP 5.Add potatoes and pumpkins to fry

step 6

  • STEP 6.Add sweet potatoes and cauliflowers

step 7

  • STEP 7.Add the beans and fry

step 8

  • STEP 8.Add the cabbages and salt

step 9

  • STEP 9.Add turmeric and mix well

step 10

  • STEP 10.Cover well and cook for 15mins

step 11

  • STEP 11.Add sugar and mix well

step 12

  • STEP 12.Add the fried brinjals and mix well

step 13

  • STEP 13.Cover and cook for 15 mins

step 14

  • STEP 14.Garnish with green chilies and coriander leaves (chopped)
