There is nothing better than letting your oven do all the work for you, while smelling the incredible BBQ pork aromas drifting all through the house.

  • As required Ingredients for pork marinade
  • 680 gram Pork short ribs
  • 1 tablespoon Ginger Minced
  • 2 tablespoon Garlic grated
  • 2 teaspoon Soy sauce
  • 0.67 teaspoon Salt
  • 1.33 teaspoon Black pepper
  • As required Ingredients for coating
  • 3 tablespoon Cornstarch
  • 0.67 flakes Chilli tsp
  • 1/2 teaspoon Sugar
  • 2 tablespoon Garlic finely minced
  • 1 tablespoon Ginger finely minced
  • 2 tablespoon Water
  • 1 tablespoon Sichuan peppercorns
  • As required Oil For Frying

Preparation Directions

  • STEP 1.Trim and cut 1 ½ lb pork short ribs into 1 ½ inch pieces.

Cooking Directions

  • STEP 1.Add 1 ½ lb pork short ribs into a mixing bowl and add 1 tbsp minced ginger, 2 tbsp grated garlic, 2 tsp soy sauce, ⅓ tsp salt, ⅓ tsp black pepper. Mix it well to coat the ribs.
  • STEP 2.Arrange the ribs in tight rows, on a sheet of tin foil and then wrap the foil like a parcel. Use two layers of foil ifthe foil is not of good quality.
  • STEP 3.Transfer this to a preheated oven at 300 degrees fahrenheit and let the ribs bake for 2 hours.
  • STEP 4.For the coating, in a large bowl add 3 tbsp cornstarch, ⅔ tsp chilli flakes, ½ tsp sugar, 1 tsp black pepper, ⅓ tsp salt, 2 tbsp finely minced garlic, 1 tbsp finely minced ginger. Mix the ingredients and then add 2 tbsp water and mix to make a paste.
  • STEP 5.After 2 hours, take the ribs out of the oven.
  • STEP 6.Place the ribs in the bowl with the prepared coating and mix well to ensure that each piece is well coated with the cornstarch mixture.
  • STEP 7.Heat oil for deep frying. Add 1 tbsp sichuan peppercorn (optional) to the oil and release more flavour into the oil.
  • STEP 8.When the oil reaches 370 degrees fahrenheit carefully add the coated ribs to the pot. The oil should bubble and froth immediately.
  • STEP 9.The ribs are already cooked. They are fried only to get a crispy golden brown crust. This takes only 1 to 2 minutes.
  • STEP 10. Check the colour and feel of the crust on the ribs and take them out of the hot oil using tongs or a slotted spoon. Place the ribs on kitchen paper towels to drain off the excess oil.
  • STEP 11. Serve hot garnished with spring onion and chopped hot fresh red chilli.

Special Comments

  • STEP 1.Spare ribs can also be used for this recipe.
  • STEP 2.It is important to fry the ribs in oil that is heated to a high temperature in order to not lose the moisture ( juiciness) of the ribs.
  • STEP 3.Fry the ribs as soon as possible after taking them out of the oven.
