Cooking Directions

  • STEP 1.Preheat the oven to 325°F (165°C).
  • STEP 2.Season the veal shanks with salt and pepper. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  • STEP 3.Add the veal shanks to the pot and brown them on all sides, about 5 minutes per side. Remove the shanks from the pot and set aside.
  • STEP 4.In the same pot, add the onions, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  • STEP 5.Add the mushrooms and cook for another 5 minutes, until they start to release their juices.
  • STEP 6.Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
  • STEP 7.Add the tomato paste, thyme, bay leaves, and beef broth. Stir well to combine.
  • STEP 8.Return the veal shanks to the pot, nestling them into the sauce. The liquid should come about halfway up the sides of the shanks.
