STEP 1.For Baskets, soak seedless Dates with hot water for 10-15 min.
STEP 2.Dry roast Oats, Peanuts and Almonds.
STEP 3.After that add the roasted Oats, dates, roasted Peanuts, roasted Almonds, desiccated Coconut and Honey into a food processor. Process until a coarse sticky texture forms. Take some portions and place it inside silicone moulds and shape like a baskets by pressing with thumbs.
STEP 4.For filling, first soak Cashews into hot water for atleast 30 min.
STEP 5.Add the soaked Cashews, crumbled Cottage cheese, Lemon juice, Lemon zest, Honey and vanilla essence into a blender. Blend on high until smooth and creamy.
STEP 6.Fill the smooth & creamy filling into prepared Oats baskets with a spoon & refrigerate for atleast 4 - 5 hrs.
STEP 7.Before serving, demould gently and decorate with melted dark Chocolate and Lemon zest and allow it to rest at room temperature for 5 minutes.
STEP 8. Enjoy this Oats nutri baskets during the breakfast or as craving snacks.
