Cooking Directions

  • STEP 1.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 2.Add chopped onions and saut茅 until they turn translucent.
  • STEP 3.Add chopped tomatoes, turmeric powder, red chili powder, and sambar powder. Cook until the tomatoes are soft.
  • STEP 4.Add the mixed vegetables, tamarind pulp, and salt. Mix well and add water. Cover and cook until the vegetables are tender.
  • STEP 5.In a separate pan, heat ghee and fry the sambar powder for a minute. Add this to the cooked vegetables and mix well.
  • STEP 6.Garnish with coriander leaves and serve hot with rice or idli.

Cooking Tips

  • You can use any vegetables of your choice like carrots, beans, drumsticks, brinjal, etc.
  • Adjust the spice level according to your preference by adding more or less red chili powder.
  • For a thicker consistency, you can mash some of the cooked vegetables before adding the fried sambar powder.

Storage and Serving

  • Leftover sambar can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the sambar before serving and adjust the consistency by adding water if needed.
