Whether as a complimentary with the sweets or as a tea time snacks #nimki will always top the list of namkeens . Sharing one of my favourite diwali namkeen :)
STEP 1.In a mixing bowl take 200 gram all purpose flour,1/2 Tsp Nigella seeds,1/2 Tsp carom seeds,1/2 Tsp Salt and 1/4 Tsp Sugar.
STEP 2.Give a good mix.
STEP 3.Add 3 tbsp refined oil and mix well until you get a crumbly texture.
STEP 4.Now gradually add water and knead a semi soft dough.
STEP 5.Cover and let the dough rest for 30 minutes.
STEP 6.Divide in two equal portions.
STEP 7.Dust some flour on the rolling surface take one part and roll it flat like a thin bread.
STEP 8.Now brush some oil on top of it ,dust some flour then roll it tightly to resemble a log.
STEP 9.Now cut the log in 1 inch pieces.
STEP 10.Repeat the same steps with the reserved portion of the dough.
STEP 11.Now roll each piece into small discs ,fold it from the center to form a half circle then fold it again to form a triangle ,press lightly to secure the shape.
STEP 12.Once done shaping deep fry them in low heat until golden and crisp.
