STEP 1.In a bowl add flour, carom, salt, oil and mix well. The oil and flour should be mixed very well.
STEP 2.Gradually add water to make a tight yet a pliable dough.
STEP 3.Cover the dough and rest it for 10-15 min.
STEP 4.Heat oil in a heavy bottom frying pan.
STEP 5.While the oil is heating divide into 5-6 dough balls.
STEP 6.Take each dough ball and roll it with a rolling pin up to 1 cm thickness.
STEP 7.Cut the flattened dough with a sharp knife into any shape.
STEP 8.Once the oil is hot, reduce the heat to low flame.
STEP 9.Carefully take the small diamonds and drop one by one into the hot oil.
STEP 10.Fry in batches till evenly brown.
STEP 11.Once done take out on paper towel to drain oil.
STEP 12.Let it cool down.
STEP 13.Store in an air tight container away from moisture, it can stay for up to a month.
STEP 14.Nimki can be served with Tea and coffee.
