Our new england clam chowder is a milk/cream-based, thick, savory soup made with a lot of clams as the main ingredient. It is loaded with smokey bacon, leeks, potatoes and fresh herbs. We served this soup with puff-pastry dilly crackers.
1/4 part Medium leeks, rinsed of soil and finely sliced, white only
1/4 Stalks celery, finely chopped
0.13 Bottle of clam juice
1/4 cup Low sodium chicken broth
0.13 cup White wine
0.13 pound Yukon gold potatoes, peeled and diced small
0.06 teaspoon Dried dill
As required Sea salt and freshly ground black pepper to taste
1/2 tablespoon Butter
1/2 tablespoon Flour
0.38 cup Whole milk
0.13 cup Heavy cream
2 ounce Container of frozen clams, defrostedundrained
0.03 cup Finely chopped fresh chives
0.13 Sheet of puff pastry dough, thawed
0.13 tablespoon Flour
0.13 Egg
0.13 tablespoon Cold water
0.13 tablespoon Dried dill
