Ingredients for Chicken Madras Recipe

  • 1/2 cup Onions-coarsely chopped
  • 1/2 tablespoon Vegetable Oil
  • 1/4 cup Water
  • 3/4 piece 6 boneless skinless chicken thighs cut into per thigh
  • 1/2 teaspoon Indian restaurant mix powder -see notes
  • 3/4 teaspoon Madras curry powder-available at any indian grocery
  • 1/2 teaspoon Paprika -for colour
  • 1/4-1/2 teaspoon Mild kashmiri chili powder
  • 1/4 teaspoon Kasoor methi-dried fenugreek leaves
  • 1/2 inch 1 1/ of cinnamon bark -also called cassia bark
  • 1/4 teaspoon Kosher salt-use a bit less if you are using table salt
  • 1/2 tablespoon Garlic ginger paste
  • 0.38 tablespoon Tomato paste plus enough water to dilute it to the consistency of tomato sauce
  • 1 tablespoon Vegetable Oil
