Navy Bean Recipe

Bacon makes everything better (in my opinion), especially in this hearty white bean soup. It's delicious, inexpensive, and easy to make and leftovers are even better the next day. I made this in my instant pot (doesn't get quicker than that!), but i've also included slow cooker and stove top directions as well.

  • 1/2 ounce 15 cans navy beans, rinsed and drained
  • 0.67 slices center cut bacon, chopped
  • 0.17 medium onion, chopped
  • 0.17 large carrot, chopped
  • 0.17 stalk large celery chopped
  • 0.33 tablespoon tomato paste
  • 0.67 cup reduced sodium chicken broth
  • 0.33 bay leaves
  • 0.17 sprig fresh rosemary, I used a bouquet garni for tossing
  • 1/2 cup baby spinach
