A popular Indian cookie made from a dough maida (all purpose four), besan (gram flour), sooji (semolina/rava) and curd( yogurt/dahi) and flavoured with cardamom (elaichi). This simple yet delecious cookie can be served with evening tea as a snack.

step 1
STEP 1.Attach the kneading blade in the food processor jar. Add 1 cup all purpose flour, 2 tbsp sooji (semolina/rava), 4 tbsp besan (gram flour), ½ tsp baking powder, 1 tsp cardamom (elaichi) powder, ¼ tsp salt, ¾ cup castor sugar, ½ cup ghee and 2 tbsp yogurt (dahi/curd) or more if required. Shut the jar and pulse mix the ingredients. Then open and add more yogurt.

STEP 1.Shut and continue to knead to make a firm dough. Once the dough pulls away from the sides of the jar. Remove it from the food processor and transfer to a bowl. Portion and shape into bite size balls.

STEP 1.Flatten slightly between palms and press the center with your thumb to make a small dip. Press some chopped pistachio in the center.

STEP 1.Arrange the nankhatai on a baking tray and bake in a preheated oven at 180 degrees celsius for 20 to 30 minutes till golden brown.
