Preparation of this south Indian breakfast recipe is easy but slightly tricky, but worth a try. Usually Mysore Bonda / bajji is made of refined flour / maida, curd and baking soda are the main ingredients.
STEP 1.In a mixing bowl add ¾ cup of cud and 1 ¼ tsp of baking soda and beat with your hands spreading your fingers.
STEP 2.Add 1 tsp of cumin seeds, 3 cups of maida and salt, beat the ingredients to prepare a fluffy dough.
STEP 3.Rest the dough for 4 hours or more as required for fermentation.
STEP 4.Add 1 chopped green chili, 1 tbsp of grated ginger, chopped curry leaves and grated coconut.
STEP 5.Beat again with your fingers for 2-3 minutes.
STEP 6.Now heat oil for frying, wet your hands and pull fist full of batter and squeeze batter in the hot oil.
STEP 7.Fry every side of the bonda in medium to high flame until it is golden in color.
STEP 8.Serve on a plate with coconut chutney.
