The name kaleji masala is a Hindi name where ‘kaleji’ means liver (lamb, goat or chicken) and ‘masala’ means spices. Basically, kaleji masala means liver pieces are cooked in spices to prepare a spicy curry whether it’s dry or gravy that is everyone’s own preference. It can be prepared with the liver of lamb, goat or chicken.

Ingredients for Mutton Kaleji Masala Recipe

  • 83.33 g kaleji
  • 0.67 Pieces onions
  • 1.33 Pieces whole green chillies..slit
  • 0.33 Tbsp Ginger garlic paste
  • 0.33 Tsp Kasuri methi
  • Handful fresh coriander
  • 1.33 Pieces tomatoes
  • 0.67 Tbsp thick yogurt
  • 0.67 Pieces black cardamom
  • 0.33 Pieces cinnamon stick
  • 2.67 Pieces cloves
  • 3.33 Pieces black pepper corns
  • 0.33 Tsp cumin seeds
  • 0.33 Tsp red chilli powder
  • 0.33 Tsp Garam masala
  • 0.17 Tsp turmeric powder
  • As Required salt
  • 0.33 Tsp cumin powder
  • 0.33 Tsp coriander powder
  • As Required oil

Directions: Mutton Kaleji Masala Recipe

  • STEP 1.heat clarified butter in a pan & add black pepper corns, cloves,
  • STEP 2. cumin seeds, cinnamon stick & black cardamom , along add the onions & ginger & garlic paste mix well and cook till golden brown on high flame.
  • STEP 3. when the onions get golden brown add the liver & once it changes it color cook it on low to medium heat till all the natural moistuer dries. (do not cover it at all, as it gets hard)
  • STEP 4. once the liquid dries then add red chillie powder, turmeric powder, cumin powder & coriander powder mix it add the tomatoes and cook it till the curry gets thick and the clarified butter comes on the surface on high flame.
  • STEP 5.when the butter comes on the surface add the yogurt & mix it well and cook it again till the butter comes on the surface on medium flame.
  • STEP 6. once the yogurt dries and the butter comes on the surface add fenugreek leaves, fresh ginger, green chillies, mix spice powder & salt mix well and cook it for 2 to 3 minutes on high flame & keep stirring.
  • STEP 7. now add the fresh coriander mix and serve hot with roti or naan.
