Kabsa is a saudi Arabia staple and is made with mutton chicken or even prawns also it can be made in crock pot and i believe it gives delicious results
STEP 1. 1.Clean and rice the mutton pieces thoroughly.Drain well
2.Add 1tsp turmeric and 1tsp salt to the mutton pieces rub well to marinate the meat well .set aside for 10mint .
3. I like to precook the mutton till it cooked well while rice is not overcooked when cooked together
4. To pre cook the mutton add to a preassure cooker with very little water for cooking the mutton .Cook in low medium heat until u hear 2 whistle .There should be little or no gravy left ,if you have gravy left,u can measure it and subtract this amount from the water we used later to cook the rice and mutton together.
5.heat the oil in small pan add some slice garlic chopped and fry till they become golden in colour remove immediately from oil now add that oil into pressure cooker with some clarified butter or ghee once it hot add sliced onion and allow to cook add som green chillies after the onion get light brown in colour add some ginger garlic paste and saute until the smell of ginger garlic paste gone then add roughly chopped tomatoes or tomato paste .and cook well . continue stir till the tomatoes mashed and oil start separate.
6.add that fried garlic
7. Now we can add kabsa spices and stir until nice and aromatic
8.Add fresh mint leaves and stir well
9.Also add dried lemon .I will use after little smashed with my finger so it can release the fragrance in the kabsa
10. Tip in the cooked mutton which is cooked only using turmeric and salt
11.toss the mutton quickly with all the gravy
12.remove the preassure cooker from the burner and place a non stick pan
13. Add 4tbsp ghee and heat
14.To this add the whole spice as mentioned in the ingredients
15.Add the drained basmati rice and fry gently to coat the grains with the spiced ghee you want to grains to just be coated and slightly change in colour
16.Return the preassure cooker to heat once the mutton is reheated,add the fried rice on top .
17. Add 6 1/4 cups room temperature water salt . remember that mutton which we have cooked it's already have salt so be careful wen use salt for cooking rice
18.stir from the bottom of the cooked once or twice only do not over mix .
19.Add the lime juice and close the preassure cooker cook on medium high heat for about 10mint under pressure
20.Turn off the preassure cooker and allow it to cool off on its own for about 5mint .After that release any steam manually by gently lifting the preassure regulator now open n check that all water observed or not gently fluff up the rice immediately from the bottom of the pot so that it doesn't overcooked donn not over mix wen it time to serve move to a serving platter garnish with toasted nuts boiled eggs cucumber tomatoes
STEP 2.@Mutton or lamb may be used but the best results areby using Indian prime mutton with bone .
STEP 3.@Tomato paste is concentrated tomato pulp that comes in small tins don't be confused with puree and sauce
STEP 4.@You may use store bought kabsa spices mix if u hv that .
STEP 5.@mutton kabsa rice can be cooked in a crackpot but in Saudi Arabia, a preassure cooker is more popular
