STEP 1. fill a pot with water and bring it to a boil. Add 100 gm egg noodles to the boiling water and boil for 3 minutes.

STEP 1.once noodles have softened and loosened, remove from the pot and drain them.

STEP 1.heat 1 tsp oil in a wok, when hot add 3 finely chopped cloves garlic, 5 gm finely chopped ginger and 1 spring onion cut into one inch pieces. Stir fry for a few seconds till fragrant.

STEP 1.add 50 gm thinly sliced mushroom and stir fry for 2 minutes.

STEP 1. add 100 gm boiled noodles, 1 tsp light soy sauce, 1 tsp cooking wine, 50 ml chicken stock and stir fry for 2 minutes, to combine flavour till the stock is absorbed by the noodles.

STEP 1.lastly add 1 tsp sesame oil and 1 more spring onion cut into one inch pieces. Toss well together.

STEP 1.serve hot.
