STEP 1.Slice 400 gm chicken breast into ⅛ inch thick slices.
STEP 2.Add ½ tsp salt, ½ tbsp soy sauce ,½ tbsp oyster sauce, ½ tbsp chinese cooking wine, ¼ tsp baking soda to tenderize the meat and a drizzle of sesame oil.
STEP 3.Mix well together to fully coat all the chicken. Cover and marinate for 20 minutes.
STEP 4.Slice 200 gm white button mushroom into quarter inch thick pieces.
STEP 5.String 85 gms snow peas and keep aside.
STEP 6.To make carrot flower slices, peel a carrot and make a 45 degree cut along the length. And then again on the opposite side to complete a small ‘V’ shaped groove.Remove the thin strip of flesh. Do this around the carrot 4 times to make 4 petal shapes. Then thinly slice the carrot. Prepare 85 gm of carrot slices.
STEP 7.Heat the wok on high heat till it is smoking hot.Then add 2 ½ tbsp oil and swirl the oil around the wok to cover the entire hot surface.Wait for the oil to smoke.
STEP 8.Then add the marinated chicken. Because the wok is hot the chicken will cook in a few minutes. Do not over-stir the chicken else it will dry out. Once the chicken changes colour, take the wok off the heat to avoid over cooking the chicken.
STEP 9.Remove the chicken from the wok by tilting the wok away from the chicken so that the oil will drain away to the side of the wok.
STEP 10.Put the wok back on the heat and in the same oil add the sliced carrots. Cook till carrots reach the desired texture. Do not cook them too soft.
STEP 11.Then add 4 cloves minced garlic along with the sliced mushrooms and snow peas.
STEP 12.Sit and cook on medium heat to avoid burning the garlic. If the wok turns dry, add a splash of water.
STEP 13.Once all the vegetables have turned a little soft, but are still firm, add 1 tbsp soy sauce and ½ tbsp oyster sauce. Mix well. Check for seasoning and adjust accordingly.
STEP 14.Then introduce the chicken back into the wok. Stir well to combine all the flavours and turn off the heat.
STEP 15.Mushroom and chicken is ready.

STEP 1.Chicken thigh with bone can also be used for this recipe.
STEP 2.Other mushrooms like fresh shiitake and oyster mushrooms can also be used for this recipe.
