Directions: Mumbai Style Egg Burji Recipe
step 1
STEP 1.in a mixing bowl crack 4 eggs , one at a time. Add salt to taste, 1 tsp turmeric powder, 1 tsp pav bhaji masala. Whisk till well combined.

STEP 1.preheat a small kadai or wok and add 1 tsp oil, 1 tsp grated ginger, 1 small onion finely chopped, 1 green capsicum chopped, 2 green chilies chopped. Saute till the onion and capsicum are soft and tender.

STEP 1.then add 1 small tomato finely chopped. Saute till the tomato is soft.4vthen add the whisked eggs and stir continuously till eggs come together in a crumbly texture.

STEP 1.once eggs are completely cooked, add 1 more tsp of pav bhaji masala and stir well.
step 5
STEP 1.finely add a dollop of butter and stir.
step 6
STEP 1.transfer egg bhurji to a serving bowl and garnish with chopped coriander leaves.
