Maghrebi mint tea, also known as Moroccan mint tea, is a green tea prepared with spearmint leaves and sugar, traditional to the Greater Maghreb region (the northwest African countries of Morocco, Algeria, Tunisia, Libya, and Mauritania).
STEP 1.Then add the tea to an outsized pot and one cup of boiling water. Let rest for one minute then pour the water into a cup. Set aside. In morocco, this tea water is termed the “spirit of the tea”, which implies it contains the primary burst of flavors from the tea leaves.

STEP 1.Add another cup of boiling water to the pot, swish around, then pour the water into a cup. Discard this step is to scrub the tea and you may notice that the water is darker the second time.

STEP 1.Pour back the “spirit of the tea” into the pot. Add boiling water to the pot till it. Three quarters full.

STEP 1.Place the pot on the stove and, on low heat, bring the tea to a boil. Take away the pot from the warmth and instantly add the mint leaves and sugar to the pot.

STEP 1.Mix all the ingredients by gushing the tea into a glass and so gushing it back to the pot. Repeat this step 2-3 times. Serve it instantly.

STEP 1.While gushing, hold the pot high higher than the glass, to induce the distinctive foam of moroccan mint tea!
