  • STEP 1.Heat oil in a pan and add mustard seeds, curry leaves, and asafoetida.
  • STEP 2.Add chopped onions and sauté until they turn golden brown.
  • STEP 3.Add sprouted moong beans, turmeric powder, red chili powder, and salt. Cook until the beans are tender.
  • STEP 4.In a blender, grind coconut, tamarind, and water to make a smooth paste. Add this paste to the pan and simmer for a few minutes.
