  • 4 piece Monkfish fillet
  • 50 gram Corn flour
  • 4 No.s Garlic Cloves
  • 2 tablespoon Brown sugar
  • 1 No.s Large fresh red chilli
  • 2 No.s Lime
  • 1 No.s Lime zest
  • As required Salt

Directions: Monkfish With Lime And Chili Recipe

  • STEP 1.toss 4 pieces of 115 gm monkfish each, in a bowl containing 50 gm corn flour. Shake off the excess flour and keep aside.
  • STEP 1.in a frying pan heat 6 tsp oil over medium heat, add the monkfish 1 piece at a time.
  • STEP 2.fry on all sides for 6 to 8 minutes until brown and cooked through. Then remove the fish from the pan and keep the pieces warm. to the same hot oil add 4 cloves finely chopped garlic, 1 large fresh red chili
  • STEP 3.Deseeded and finely chopped, juice of 2 limes, 2 tbsp brown sugar, zest of 1 lime, 3 tbsp water and bring to a boil on low to medium heat. add salt to taste and simmer for 2 minutes. arrange the fish on a serving dish and spoon the sauce over the fish. Serve hot with rice.
