Mixed Vegetable Bonda is pretty much similar to Aloo Bonda except that it’s not just potatoes here but mixed veggies also go in. These veggies are seasoned with spices, dipped in gram flour batter and then deep fried .
STEP 1.Parboil the veggies just till soft. (should not be mushy)
STEP 2.Once cooked, lightly mash them.
STEP 3.To this add minced green chillies and ginger. Mix and keep.
STEP 4.Prepare a batter with medium consistency (not thick nor thin and should be lump-free) using gram flour, red chilli powder, salt, asafoetida and water. Keep aside.
STEP 5.Heat oil in a pan. Add mustard seeds and let them splutter. Next add urad dal and fry till it goes light brown.
STEP 6.Now add the curry leaves.
STEP 7.Add this to the veggies. Mix well.
STEP 8.Sprinkle lime juice and add the chopped coriander leaves. Mix.
STEP 9.Make small balls of the veggie mixture.
STEP 10.Dip each one in the batter (ensure that the balls are well coated with the batter).
STEP 11.Deep fry till golden brown.
STEP 12.Serve hot with any chutney or with tomato ketchup.
