There are many types of pickles we eat. But in winter, use of seasonal vegetables in making of pickle, is very healthy. Tasty too. So I made, mix vegetable pickle by using daily used vegetable. It turns very yummy.
STEP 1.Gather all ingredients. Wash all vegetables, and cut into small pieces.
STEP 2.Now take a bowl, add all vegetables in it.
STEP 3.Add lemon juice and mix it well.
STEP 4.Now add, salt, chilli powder and jaggery to it.
STEP 5.Add mustard dal and mix it.
STEP 6.Now , put a small pan on gas, pour small amount of oil in it. When oil is hot, turn of heat, and add Fenugreek seeds in it. Fry it , until its colour change. With the help of belan, crush it. Add it into mixed vegetable.
STEP 7.Now in the same pan, make oil hot, and turned off gas , add asafoetida and turmeric powder in it. Mixed it well.
STEP 8.When oil is cooled down, add in vegetables mixture.
STEP 9.After finely mixing, the pickle is ready to eat.
STEP 10.It can be stored in refrigerator for a week.
