Mini pizza bites are quick and delicious little appetizers made with frozen mini filo shells or rounds of dough. The filling works well with either base ingredient. The filling is very simple but can be changed in various ways. You could use chopped cooked onions or mushrooms in place of the minced green onions. Use provolone or cheddar cheese instead of the parmesan or mozzarella cheese. Or add another pizza ingredient you like, such as minced garlic, olives, chopped seeded tomatoes, or chopped bell peppers. This is a great appetizer for a buffet party or a wonderful addition to an appetizer party, especially in the winter. The little pizza bites are even good at room temperature, but you can keep them on a warming tray if you'd like to keep the cheese soft and melted.
