Ingredients for MINESTRONE SOUP Recipe

  • 1/2 cup Elbow pasta, uncooked
  • 1 tbsp Olive oil
  • 1/2 tbsp Chopped garlic
  • 1/2 Cup chopped onion
  • 1/2 cup Chopped Zucchini
  • 1/2 cup chopped carrot
  • 1/2 cup baby corn
  • 1/2 Pieces boiled red beans
  • 1 cups raw tomato puree
  • 1/2 tbsp Oregano
  • 1/2 tbsp Thyme
  • 1/2 Pieces Bay leaf
  • 2.50 Pieces Some cherry tomatoes to garnish
  • 2.50 Pieces Basil Leaves (Fresh/Dry)
  • 1.50 cups Water
  • As Required For Ganishing Cheese garnishing

Directions: Minestrone Soup Recipe

  • STEP 1.Heat olive oil in a heavy bottom saucepan. Add bay leaf, garlic and onion. Saute for a minute to release the aroma of the ingredients. No need to brown the onion or garlic.
  • STEP 2.Add tomato puree and stir to combine. Cook for 10 – 20 seconds. Cook till oil seperates.
  • STEP 3.Add all the vegetables, beans, salt and saute for a minute. Add the pasta and water.Stir to mix. Cover and cook the soup for 5 – 10 minutes over low heat or until vegetables are tender.
  • STEP 4.Add cherry tomatoes. Add fresh herbs, and grated cheese. Ladle the soup into the serving bowls.
  • STEP 5.Serve Minestrone Soup warm with the slices of toasted bread.
