STEP 1.In the small jar of the mixer grinder add 1 cup coriander leaves (cilantro) and make a paste.
STEP 2.In a preheated pan add 1 tsp oil, 4 cloves chopped garlic, 1 inch ginger finely chopped. Saute for a few seconds till the garlic is soft.
STEP 3.Then add 1 onion finely chopped. Saute till onions are soft and lightly browned.
STEP 4.Add 2 tbsp jalapenos slices, 2 ½ cups cooked rice, 1 tbsp dried thyme, 2 tbsp red chilli flakes, 1 tbsp oregano, ground coriander paste and salt to taste.
STEP 5.Mix gently but thoroughly to combine the rice with all the ingredients in the pan.
STEP 6.Squeeze juice of 1 lemon.Stir for a few more seconds and turn off the heat.
STEP 7.Mexican jalapeno cilantro lime rice is ready.
