Mexican Caprese Salad Recipe

Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much. Avocados, cilantro, cotija cheese, salsa verde and taco salad dressing complete the salad.

  • 1/4 pound Tomatillos

  • 1/4-1/2 Jalapeo peppers
  • 1/4-1/2 For a medium spicy salsa, addserrano peppers
  • 0.13-1/4 For a very spicy salsa, add habaero pepper
  • 1/4 teaspoon Salt
  • 1/4-3/4 Garlic Cloves
  • 0.13 A white onion
  • 1/4 bunch Cilantro
  • 1/4-1/2 tablespoon Canola oil
  • 1/4 tablespoon Lime juice
  • 3/4 tablespoon Champagne vinegar
  • As required Splash of canola oil
  • 0.06 teaspoon Cumin
  • 0.06 teaspoon Paprika
  • 0.06 teaspoon Garlic powder
  • 0.06 teaspoon Chili powder
  • dash Salt
  • dash Black pepper
  • 0.06 cup Cilantro, chopped or torn
