The flavor is rich, slightly smoky, with a depth similar to that of soy sauce. There is also a slight tang and sweetness. Mentsuyu is another central ingredient in Japanese dishes, made by adding soy sauce, mirin rice wine, and other ingredients to dashi. Tsuyu is used often as a dipping sauce for everything from tempura to udon, to soba noodles.
