Matki bhaat is a common spiced rice made using matki or sprouted moth (moong) beans in maharashtra and gujarat . Very nutritious, flavourful and a complete meal in itself. My grandmother used to make this and i always think of her when i make it too.

Ingredients for Matki cha bhaat with veggies Recipe

  • 1/4 cup Matki/ Moth beans sprouted
  • 1/4 Onion medium sized, finely chopped
  • 1/4 inch Ginger
  • 1-1.25 Garlic Cloves
  • 1/2 Green Chillies
  • 1/4 Green Bell Pepper , finely chopped
  • 1/4 Brinjal small, finely chopped
  • As required Curry Leaves a few leaves
  • 1/2 tablespoon Fresh coriander Leaves/ coriander Seeds tsps
  • 1/2-3/4 tablespoon Freshly grated or Dessicated Coconut
  • 3/4-1 Cloves
  • 1/4 stick Cinnamon small
  • 1/4 teaspoon Peppercorns
  • 1/4 teaspoon Sabut Zeera
  • 1/4 teaspoon Mustard Seeds
  • 1/2 teaspoon tamarind a small lime sized ball, I used readymade tamarind extract
  • 1/4 pinch hing
  • 1/4 tablespoon turmeric Powder
  • 1/4 cup Basmati Rice Washed and soaked in 3 cups of water
  • 1/4 tablespoon Ghee
  • As required Salt
