STEP 1.In a mixer jar add 1 bay leaf, 2 green cardamom, 1 black cardamom, 3-4 black pepper, 3-4 cloves, 1 cinnamon stick 1 star anise, 1/2 tsp fennel seeds, 1/4 tsp methi daana, 1inch ginger and 3-4 spicy green chillies. Grind to a coarse powder. To that add 10-12 washed spinach leaves, handful of coriander and again grind to make a paste.
STEP 2.Boil 4-5 aalu and mash slightly with palm..
STEP 3.Heat a pan. Add ghee and oil. When hot add prepared paste and cook for 3-4 mins.
STEP 4.Add red chilli powder, coriander powder, salt and turmeric powder.
STEP 5.Now add mashed potatoes and 3-4 glasses of water.
STEP 6.Boil the curry for good 15-20 mins.
STEP 7.Now add 1 tsp maida slurry made in water to the curry and cook for another 5 mins.
STEP 8.In a tempering pan heat oil. Add dried red chillies, cumin seeds, Hing and little kashmiri red chilli powder. Pour this over prepared curry..
STEP 9.Mix and Serve with hot Puris and Kheer.
